
We own a pair of these Shun 5" steak knives, and they are absolutely excellent steak knives.They are thin, rigid, light, sleek, and well-balanced.They slice meats thinly and smoothly, with the cut falling away from the blade.We've also noticed that when we pull them out of our bamboo knife block, they make a steely ringing noise, like unsheathing a tiny sword.While that might not be as amusing to you, we consider it a testament to the knife's craftmanship.I nearly forgot to mention that they are extremely *sharp,* but you could probably gather that from both reviews.We give these knives a "high recommendation," even with the equally high price point.Now if we could only afford to buy two more...
[Edit - July 2008] After a few months of pretty constant use, we have managed to chip both knives (!) They require professional sharpening, and should absolutely never be used as general utility knives.They are quite a bit more delicate than we first thought.Still recommended, but you really have to be quite careful with them.
