I saw these reviewed on America's Test Kitchen as rating right up there with the more expensive knives.Who needs the more expensive knives?Not only do these knives slice through meat like, well, butter, but they are comfortable in my hand AND they can be had on Amazon for roughly 1/2 of the list price. Yes, you will have to eventually have to maintain the edge and sharpen them at some point, but if you appreciate good knives that shouldn't be an issue.I am very happy with this purchase.

I think I should have bought 3 sets. They are always sharp and my guests remark on the quality of the knives at meals. I even use them sometimes when I am doing prep work. These would be a great gift item too.

After I used them ONCE and washed them in the dishwasher the blades rusted!That's unacceptable.I have cheap stainless steal steak knifes I've had for 25 years that have NEVER rusted in the dishwasher.The box says dishwasher safe although in small print it says not recommended.Now I know why.They are inferior.
I purchased these knifes thinking I was going to get something a cut above.They are not as good as a $10 set of Steak Knifes from a discount store.Save your money!
I am returning mine.

I am usually wary of things coming in fancy boxes but these knives have turned out to be fantastic. I purchased them (without my wife knowing) for a special dinner I had for a couple friends. My wife didn't notice them until she sank the knife into her perfectly grilled rib eye. The knife went through it like butter. My guests were also impressed. This helped to temper the scolding I got after they left for going over my kitchen gadget allowance. Oh, dear God, I love these knives. Their weight in your hand is hefty without being tiring. The blades are sharp, precise, and easy to handle. And do they slice? I mean -- and do they SLICE!!!

After each meal, I hand-wash these instruments and give them a quick touch of the sharpening stone. I then gently, very gently, place them back into their case for safekeeping. Is it any wonder my fiancé is jealous?

I do have one complaint -- I only have four of these knives. I'm going to need at least eight more for the grilling I plan to do next summer. I mean, it's going to take a big patio party to properly show off these fine blades.

Just received these knives and they seem to be a fine set of steak knives. However, I noticed that these gourmet series (with the exception of the 8" chef's knife), use different steel than their more expensive classic series. Specifically, the classic series uses "X50CrMn15" material, whereas these gourmet series uses "X46Cr13". The major difference being that X46Cr13 contains less carbon (0.5% vs. 0.46%) and that it does not contain Mn (molybdenum), which is needed for knives to be totally dishwasher safe. ...

I bought my set in Dec 2005 and have been using them nearly daily for 2 years. I use them for many kitchen utility tasks like deboning, vegetable slicing, opening up UPS packages, etc. I don't rotate my knives, so there are 3 or 4 knives I have used the majority of the time during these 2 years.I also don't abuse my knives like cutting wire, sheetrock or wood. So they have stayed sharp without any noticeable degradation of sharpness.

Handles are a plastic that is very rugged.Two years of dishwasher cleaning has not affected the plastic at all, no dulling, white hazing nor cracking. Still looks the same when I first opened the box.

At these prices ($6/set or less)don't even think twice. Pick up a set or two for the kitchen, tool box, fishing tackle box, etc.Great bargain and great value.

If you're looking for a cleanly designed knife with a wicked looking blade, these knives are for you.

If you are expecting to use the knives to actually cut steak, look elsewhere. The blades are not particularlysharp - they rely on the sawing action of the serrations. If you don't havefirm grip on your fork these knives will just drag your steak around theplate. The knives don't cut, the RIP through the meat. The small serrationsquickly become clogged and any semblance of cutting disappears.

My wifehas some steak knives she got years ago as a premium for buying a full tankof gasoline... these knives, with a few strokes on a good stone, will cut a1 inch steak in a single pass - something you could NEVER accomplish withthe Henckels.

These are good sturdy steak knives suitable for every day use and for entertaining. The blade runs through the handle as it should in a quality knife.The serrations are very tight and small and run from about a half inch from the tip of the blade to about two inches before the handle. The handle is some type of composite with a black matte finish. There are no spaces around the blade where it meets the handle where food might get stuck. They have a nice weight in the hand, cut well, and hold up well in the dishwasher. I've been using these for a few months and the color has not faded on the handles and it doesn't look as though that will happen. They are well made and a good value for the price. I have purchased more expensive knives that have rusted or have damage to their wooden handles due to the dishwasher. I recommend these.

I'd been dealing with a steak knife set that I hadn't been happy with for a while.Remembering how well the original Ginsu knives had worked, I did some searching and came across this stainless steel set.I took the plunge and ordered a dozen knives, at this price if they were garbage, I'd throw them out.They arrived today and I must say I was quite impressed at the look and feel of them.They have a heftiness to them I was glad to feel, unlike the lightweight set I was about to discard.I tested them on some leftover steak I had in the fridge....they cut it like butter!I'm delighted beyond belief.Sure you can spend 10 times this amount on steak knives, but I doubt you will find ones that do the job better.Looks, feel, quality and a bargin basement price. Although they *occassionally* get dishwasher stains on the handles, the blades themselves never get dishwasher stains on them, which is important to me;my girlfriend bought a different set of stainless steel steak knives (different manufacturer) that consistently come out of the dishwasher with massive rust stains on the blades themselves, which makes me not use them (who wants to eat rust).This makes me appreciate the Henckels set even more:I would definitely recommend this Henckels set.

Review of J.A. Henckels International Eversharp 8-Piece Steak Knife Set

I have several Henckels Eversharp steak knives that are several years old and they continue to cut well and have survived many dishwasher cycles.I just added six more that I recently purchased from Amazon and expect similar performance from these.I also own a set of Henckels Four Star knives that are over 20 years old.They do not go into the dishwasher but need regular sharpening/honing.The steak knives are not in the same league as the Four Star line but they are very convenient (just toss in the dishwasher), relatively inexpensive, perform well and are fairly durable.

My recommendation is to go with these knives if you are looking for a set of steak knives to be used on a daily basis.
