
Keep in mind that these are silicone mats, and they share some of the downsides of all other silicone mats.First, "releases food easily" doesn't mean non-stick; neither side of the mat will feel glistening smooth.Food will still lift off easily (when lifting cookies, remember to let them cool/solidify for a bit, of course!).Second, they WILL STAIN with use, and this is expected.
What disappoints me about these mats is how UGLY they make my food.My biggest gripe with these mats is that they quickly EXPAND when heated, even after 3 minutes at a mere 350 F!Unfortunately, since the mat is usually underneath something heavier and colder (eg, cookie dough) it expands unevenly into a rippled shape, and the between-cookie "bubbles" can rise as tall as .5 inch.As a result, cookies can't expand into a nice round shape; they set into whatever malformed shape exists between bubbles.That's fine for home-baking, but I don't use these mats when baking for friends or co-workers.My second gripe is that the length markings are not printed on the mat; they're raised.This means that, unless I like having numbers imprinted onto the bottom of my baked goods (and scraping dough out of those raised numbers), a significant fraction of my mat is unusable.
